The 2016 Illinois Farm to School Summit featured a local lunch, designed for school menus. We created a menu that complied with school nutrition standards, and also allows for schools to use a mix of local and non-local ingredients. In order to share these recipes, we developed a Recipe Tracker for foodservice departments who want to do more farm to school. The Recipe Tracker includes all the recipes from the Summit, plus blank pages for you to use to create your own recipes. Download the Recipe Tracker here. At the Summit, we also had a delicious salad bar filled with nutritious, colorful ingredients. Diane Chapeta of the Illinois Farm to School Network has a great training on how to put together affordable, delicious and locally sourced salad bars in schools (something she has 20 years of experience doing as a former food service director).
